A New take on spaghetti and meatballs

Let me first apologize for the terrible lighting in these pictures! It was an awkward time of day and we just couldn't get it right!! 

now on to your regularly scheduled blog post :) 

Since I’ve been home with Kennedy, I have been watching a lot more daytime tv! We are usually snuggling on the couch in the mornings, or if we are playing on the floor or doing tummy time the tv is usually on for background noise. I remember watching Rachel Ray years ago with her early shows (like $40 a Day or 30 Minuet Meals)  I always enjoyed them and now she has her own talk show. Apparently it’s been on a while but I was just never home during the day to watch it! 

Her show is so uplifting and positive. In a world filled with negativity, it’s so nice to have an hour of good clean tv! Each episode she cooks a new dish, and it seems like every day I am wanting to try her recipes! ...and her awesome cookware! I love that she has a spoon that will rest on the side of your pot without getting your counter dirty!! I keep meaning to order one! Recently she made this meatball and orzo dish that I just had to make myself!

I made a few changes/substitutions based on what we had in our pantry (I forgot I had already used the onion I bought to use in this dish, and we only had white wine) but it turned out so well! Chad really enjoyed it and we both enjoyed the leftovers for lunch the next day! We try really hard, but really aren't leftover people! 

 Feeding people is definitely one of my love languages and I get so happy when he really really likes something new that I’m trying out! I also think that the meatballs would be really good in pre-made sauce!
